Recipe: Pumpkin Fluff

I don’t normally share recipes on the blog, seeing as I’m not much of a cook or baker, but this fall treat is a favorite of mine that is just too easy and delicious not to share! Pumpkin Fluff! (It’s a fall treat, so you knew it had to be pumpkin something!) I made it for every fall get together last year and, now, I have taken to whipping up a batch just to have on hand for a yummy snack! If you can pour ingredients in a bowl and mix with a spoon, you can make this! It’s that easy. And it’s totally scrumptious, while still vaguely healthy. Despite it’s name, there is no actual marshmallow or fluff in it. (I mean it’s not like a pumpkin cheesecake cupcake, so by default, it’s totally healthy!)

So, let’s get to the good stuff! What you will need:

  • 1 (16 ounce) container frozen Cool Whip, thawed (I get the LITE Cool Whip.)
  • 1 (5 ounce) package instant vanilla pudding mix
  • 1 (15 ounce) can of pumpkin
  • 1 teaspoon pumpkin pie spice
  • A sprinkle of cinnamon
  • Some sliced apples (Honeycrisp are my favorite!) or cookies of your choice to serve along with your Pumpkin Fluff

How to make this delicious concoction:

In a large mixing bowl, mix (hand mixing works just fine!) together the container of Cool Whip, the instant vanilla pudding mix, the can of pumpkin, and the pumpkin pie spice. Mix until the pumpkin is all nice and blended in. Chill in the refrigerator a few hours (and/or until serving). Once you are ready to serve, sprinkle your pumpkin fluff with a little cinnamon and serve with crisp sliced apples. It’s seriously heaven in your mouth, SO good! (You can also serve with Nilla Wafers, graham crackers, or something of the like, but personally I think the apples are so much tastier and way better for you!)

A fun tip for serving at parties (You know, bascially anytime it isn’t just you sitting with the huge bowl in your lap, just going to town.) is to carve out a small cooking pumpkin all nice and clean to use it as your pumpkin fluff serving container. Just spoon the fluff into the pumpkin and plate your apples and cookies around the pumpkin on a plate, voila! I did this last for parties and it was a fabulous presentation for the fluff, so cute! (Because honestly as amazingly tasty as it is, it doesn’t photograph well just sitting on a plate, so spruce it up for guests!)
